RECIPE: PEANUT BUTTER & BANANA OATMEAL MUFFINS WITH PB FROSTING

Well that’s a mouthful. And a delicious one at that! I made these muffins on Friday night to bring over to our neighbours house. They were all gobbled up pretty fast! They are actually really healthy muffins, with really unhealthy frosting. So I made some without any frosting so we could eat them with breakfast and not feel guilty. Try ‘em and let me know what you think!
Peanut Butter Banana Oatmeal Muffins with PB Frosting
(muffin recipe modified from here)
11/2 C all-purpose flour
1 C old fashioned oats
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 Tbsp applesauce
1/2 C honey
2 large eggs
3 mashed bananas
6 Tbsp creamy peanut butter
1 C skim milk

1. Preheat oven to 350 degrees F. and grease 18 muffin cups.
2. In a medium bowl, combine the flour, oats, baking powder, baking soda, and salt.
3. In a large bowl, mix together the applesauce, honey, eggs, bananas, peanut butter, and milk until smooth.
4. Slowly pour the dry ingredients into the wet ingredients and mix until just incorporated.
5. Divide the batter evenly among 18 greased muffin cups. ( I like to use a 1/3 C measuring cup to help )
6. Bake 18-20 minutes, until edges of the muffin tops are golden brown.
7. Let cool for 5 minutes before removing muffins onto a wire rack to cool completely.

Peanut Butter Frosting
1/4 C butter (room temperature)
1/2 C peanut butter
1 1/2 Tbsp milk
1 C icing sugar
1/4 tsp vanilla

1. Whisk all ingredients until smooth.
2. Wait until muffins are completely cooled, and start frosting!
